One of the things that makes sourdough difficult is that the dough does not care what time you started it. Brian Smith of Lincolnton, North Carolina learned this across roughly forty batches before it stopped being frustrating and started being something he found interesting.
Fermentation runs on ambient temperature, starter activity, and flour composition. It does not run on the timeline you had in mind when you mixed the dough on Saturday morning.
The Variable That Changes Every Time
Smith has baked bread in his kitchen at 66 degrees in winter and at 79 degrees in summer. These are not dramatically different temperatures by most measures. They produce dramatically different bulk fermentation timelines.
At 66 degrees with his typical starter activity, bulk fermentation takes between six and seven hours. At 79 degrees, it is closer to three. A recipe that says "bulk ferment for four to five hours" is describing a kitchen that does not exist in any specific form anywhere.
This is why Smith tracks ambient temperature for every batch. The temperature is the variable that changes the most between weekends and is easiest to miss because it is easy to assume it is roughly the same as last time. It often is not.
What Happens When You Try to Force It
He has baked bread that was not ready because he ran out of time. The dough went in underfermented, and the loaf came out dense and chewy. Good enough to eat. Not what he was trying to make.

Both mistakes are in the notebook. Both have the same lesson: the dough tells you when it is ready. You have to be there when it does.
What He Watches For
During bulk fermentation, Smith watches for three things. The dough should increase in volume between 50 and 75 percent. The surface should appear domed and slightly jiggly when he moves the container. The edges of the dough where it meets the sides of the bowl should look smooth, not ragged or deflated.
He also does the poke test toward the end of the estimated window: press a floured finger gently into the dough. If it springs back slowly and partially, it is ready. If it springs back immediately, it needs more time. If it does not spring back at all, it has gone too far.
These indicators are not foolproof. They are data points. The notebook adds context to what they mean in his specific kitchen across his range of conditions.
Learning to Watch Instead of Wait
Brian Smith of Lincolnton now bakes without looking at the clock during bulk fermentation. He uses the clock to record the start time in the notebook, and he checks it again when the dough shows him the signs he is watching for. The time is a reference point, not a timer.
This took more than a year to develop. Before it became automatic, he watched the clock too closely and made decisions based on elapsed time rather than on what the dough was showing him. That produced inconsistent bread.
Sourdough teaches you to read something that does not communicate in familiar terms. You learn the language by paying attention, and you keep the record because the record tells you what you actually saw versus what you thought you saw.
His most recent Saturday batch took six hours and twenty minutes to bulk ferment. The kitchen was cooler than usual. He caught the endpoint because he was watching the dough, not the time.
The loaf had a good crumb. He wrote down the temperature and the elapsed time. Both are in the notebook, available for next January when the kitchen is cold again.
Patience, he will say if you push him on it, is not the right word. Persistence is. Patience implies waiting without discomfort. What sourdough asks for is the ability to be wrong enough times in a row to learn something.
He was wrong enough times. The notebook recorded it. The bread got better. That is how it works.
